Summary
Operates a satellite food service facility by receiving, heating and serving prepackaged and fresh foods, and performing cashiering, data entry, recordkeeping and reports, and clean up. Maintains an inventory of food and supplies, determines quantity of food required and makes the appropriate orders. Heats and serves food in accordance with the National School Lunch Program (NSLP) and other applicable food safety regulations.
Distinguishing Career Features
The Cafeteria Services Specialist is the second level in a service-oriented career ladder. Assignments will usually be at a satellite kitchen site, and may take place in a partial leadership role at a central production facility. The Cafeteria Services Specialist requires the ability to independently operate a small food service facility, performing the services required at a school site including record keeping and computer data entry, compliance with food service safety and sanitation guides, and ordering adequate quantities to meet daily demand. Advancement to Assistant Manager is based on need, and requires two years of food services experience, and the ability to supervise a team of up to approximately six Cafeteria Assistants where the emphasis is on receiving, heating and serving prepared meals, including pre-packaged foods and fresh fruits and vegetables.
Education and Experience
Requires a high school diploma or equivalent, and some computer and recordkeeping experience. Food services experience desirable.
Knowledge and Skills
The position requires: Working knowledge of institutional quantity food preparation, methods, procedures, and service; food storage, safety, and sanitation procedures; and food production line processes. Sufficient mathematical skills to add, subtract, and use decimals and fractions to count cash and make change, compute weights, measures, counts, and portions. Sufficient reading skills to interpret menus, ingredient lists, and preparation instructions. Sufficient human relations skills to work with staff and students, exhibit positive customer service and work as a productive member of a team.
Abilities
Requires the ability to: Independently maintain and monitor a kitchen food service environment. Understand and follow directions, Food Service policies, procedures, rules and regulations. Perform basic recordkeeping functions, and complete routine food service reports. Must be skilled in operation of commercial kitchen equipment used for preparing and serving portioned foods and/or production equipment used for portioning and packaging food items. Customer service skills to work with students and staff. Use a personal computer for storing, receiving, and transmitting data. Sequence food preparation activity in order to serve a variety of food items at the same time. Follow oral and written instructions. Interpret menus and ingredient lists. Requires the ability to work varying shifts and locations.
Physical Abilities
The position performs work of an active nature. Requires: general arm, hand, leg, and body coordination to use standard large kitchen equipment and perform repetitive movements; physical ability to stand for extended periods of time; ability to lift, push and pull objects of medium weight; ability to handle hot material and work in an environment dominated by wide temperature extremes that include hot temperatures and cold storage rooms; and sufficient hand-eye coordination to maintain pace in a production setting.
Licenses and Certificates
May require a valid California Driver's License. Requires a valid California Food Safety Certificate; employees must fulfill certification requirements within six months of employment in a regular position.

Work is performed indoors and outdoors where significant health and safety considerations exist from physical labor and handling of sharp objects, equipment, and materials in conditions that vary in temperature and stability.
